Mediterranean Chicken Pita Stuffers
1 6oz boneless skinless chicken breast
¼ ea. red onion finely sliced
1 ea. roma tomato small diced
2.5 oz. feta cheese crumbled
2.5 oz. Kalamata olives pitted
.5 oz. of roasted pine nuts
3 oz. spring mix
1 pinch of oregano
2 oz. red wine vinaigrette
2 oz. lemon juice
1 ea. clove of chopped garlic
Salt & Pepper to taste
2 ea. pita bread grilled and quartered
Marinate chicken in lemon juice, dash of oregano, salt, pepper, and garlic for at least 4 hours, (overnight would be ideal). After marinating dice chicken into healthy bite size pieces and sauté to a minimum of 150* and set aside in its own juices to let rest. In separate mixing bowl add the rest of your ingredients including chicken and vinaigrette, tossing lightly to incorporate flavors. Open gently each quarter of the grilled pita and put a healthy portion of salad mix into each quarter.
